Sourced from 25 smallholder farmers—10 women and 15 men—in the high-altitude regions of Pitalito, Palestina, Salado Blanco, and Acevedo, this single-variety Pink Bourbon is both rare and exceptional. Grown at elevations ideal for developing nuanced flavor, this lot represents the dedication and precision required to produce high-quality specialty coffee.
While originally believed to be a mutation of Red and Yellow Bourbon, newer research suggests Pink Bourbon may be a unique Ethiopian landrace variety. Its distinctive flavor and appearance—longer, slimmer beans more reminiscent of Ethiopian coffees—set it apart from typical Colombian profiles.
Due to its rarity and difficulty in cultivation and harvest, Pink Bourbon is produced in small quantities. Farmers must carefully manage cross-pollination and hand-pick cherries that ripen in a range of colors from light red to soft orange. The result is a beautifully complex cup that sits somewhere between a floral Ethiopian and a rich, structured Colombian.
